About this whisky

The Macallan is a Scotch whisky from Speyside, in the north-east of Scotland and one of the country's most celebrated whisky regions. It suits a yacht cellar that wants a dependable, well-regarded Scotch on the back bar.

Speyside whiskies typically drink rounded and fruit-led, with orchard fruit, honey, malt and vanilla, and soft spice rather than heavy peat smoke. Serve it neat or with a few drops of water after dinner. It pairs well with dark chocolate, roasted nuts and aged hard cheese, and it holds up over a single large cube of ice on the aft deck.

The Macallan Reverie

Ingredients

  • 45 ml The Macallan 12 Years Old
  • 20 ml Cognac (VSOP)
  • 15 ml Amontillado Sherry
  • 10 ml Honey Syrup
  • 2 dashes Angostura Bitters
  • 1 dash Orange Bitters Pinch of Sea Salt

Method

  1. Add all ingredients to a mixing glass filled with large ice cubes
  2. Stir continuously for 45 seconds until properly chilled and diluted
  3. Strain through a fine mesh strainer into the prepared glass
  4. Express the oils from an orange peel over the drink's surface

Serve

Serve in a crystal rocks glass (250 ml capacity). Garnish with a single large-format ice cube (preferably one 5cm cube) and a twisted orange peel positioned on the rim's edge. Present the drink with the orange peel resting across the surface of the ice, allowing the citrus oils to perfume the first sip.
