The Fino Soloist

Ingredients

  • 60 ml Kavalan Solist Fino Sherry Single Cask
  • 20 ml dry vermouth
  • 10 ml Chartreuse Jaune
  • 5 ml fresh lemon juice
  • 2 dashes Angostura bitters
  • 1 dash orange bitters
  • 15 ml clarified chicken stock (optional, for umami depth)

Method

  1. Add all ingredients to a mixing glass filled with large ice cubes
  2. Stir continuously for 45 seconds until the mixture is properly chilled and diluted
  3. Strain through a fine mesh strainer into the chilled glass
  4. Perform a secondary strain through cheesecloth for optimal clarity
  5. Allow the drink to settle for 10 seconds before garnishing

Serve

Serve in a chilled Nick & Nora coupe glass. Garnish with a single, paper-thin wheel of preserved lemon positioned horizontally across the rim. Express the oils from a 2cm x 2cm piece of dried orange peel over the surface, then place the peel delicately on the drink's surface.
