Key characteristics

About this armagnac

Darroze is one of Armagnac's most respected négociants, selecting single-domaine eaux-de-vie from small Gascon estates and ageing them under their own roof rather than blending them away. The Domaine la Péré expression is part of their Collection range: an unblended, cask-strength Armagnac from a single named property, bottled without reduction at 50% ABV.

At this strength and in the hors d'âge style, expect significant depth, dried fruit, old leather, beeswax, and the rancio character that marks long-aged Armagnac. Serve neat in a wide-bowled glass, or alongside bitter dark chocolate and aged hard cheese at the end of a long dinner.

The Péré's Legacy

Ingredients

  • 60 ml Darroze Domaine la Péré 1993 Armagnac
  • 20 ml Cognac VSOP
  • 15 ml Dry Vermouth
  • 10 ml Crème de Cacao (white)
  • 2 dashes Angostura bitters
  • 1 dash orange bitters
  • 1 sugar cube

Method

  1. Place the sugar cube in a mixing glass and saturate with both types of bitters.
  2. Add the Armagnac, Cognac, Dry Vermouth, and Crème de Cacao to the mixing glass.
  3. Fill the mixing glass with large ice cubes.
  4. Stir continuously for 45 seconds until properly chilled and diluted.
  5. Strain into the chilled glass using a fine strainer.

Serve

Serve in a crystal coupe glass. Garnish with a single large format ice sphere (2 inches diameter) placed in the center of the drink. Express the oils from a flame-torched orange peel over the surface and place the peel across the rim. Present the glass on a dark wooden serving board with a small card describing the 1993 vintage provenance.
