The Barsol Sunrise

Ingredients

  • 60 ml Barsol Pisco
  • 30 ml fresh lime juice
  • 20 ml Luxardo maraschino liqueur
  • 15 ml agave nectar
  • 2 dashes Angostura bitters
  • 1 egg white
  • 15 ml Pisco (for float)

Method

  1. Add Barsol Pisco, fresh lime juice, Luxardo maraschino liqueur, agave nectar, Angostura bitters, and egg white to a cocktail shaker without ice.
  2. Dry shake vigorously for 15 seconds to emulsify the egg white.
  3. Add ice to the shaker and shake for another 12 seconds until well chilled.
  4. Double strain into the prepared glass.
  5. Slowly pour the 15 ml of Pisco over the back of a bar spoon to create a layered float on top.

Serve

Coupe glass chilled to 0°C. Garnish with a single dehydrated lime wheel placed flat on the surface of the cocktail. The layered Pisco float should create a visible color gradient from amber to clear at the top of the drink.
