A precise and focused Chablis with classic minerality at its core. The nose offers green apple, white peach, and lemon zest layered with flinty, oyster-shell notes and a subtle chalky character. On the palate, Les Fourneaux delivers a taut, saline-driven acidity with flavours of citrus curd, unripe pear, and white flowers. The finish is long, clean, and strikingly mineral, with excellent tension and a crisp, refreshing persistence.

About this wine
Samuel Billaud is one of Chablis's most respected independent producers, farming his own parcels after leaving the family domaine to vinify under his own name. Les Fourneaux is a premier cru lieu-dit on the right bank of the Serein, facing south-east and delivering riper, more generous fruit than many of its neighbours.
Expect the hallmarks of serious Chablis, flint, green apple, lemon zest and a saline, chalky minerality, with the extra weight and texture that premier cru fruit brings. At 13% ABV it stays focused and food-friendly. Serve with oysters, langoustines, sea bass en papillote, or a well-sourced plateau de fruits de mer.
