- Single candied orange peel twist (2cm x 4cm) placed horizontally across the foam surface, dusted lightly with ground cinnamon applied through a fine sieve
Ingredients
- 45 ml Glenmorangie Original 12 Years Old
- 20 ml Honey liqueur
- 15 ml Fresh lemon juice
- 10 ml Vanilla syrup
- 2 dashes Angostura bitters
- 1 egg white
- Splash filtered water
Method
- Add all ingredients except water to a cocktail shaker
- Perform a dry shake (without ice) for 10 seconds to emulsify the egg white
- Add a large handful of ice to the shaker
- Shake vigorously for 12 seconds until well-chilled
- Double strain into the prepared glass
- Allow the foam to settle for 5 seconds before serving
Serve
Coupe glass chilled to 4°C. Garnish with a single candied orange peel twist (2cm x 4cm) placed horizontally across the foam surface. Dust the foam lightly with ground cinnamon applied through a fine sieve. Present with no additional accompaniments.
