Enric Soler works in the Penedès, Catalonia, with Xarel-lo as his focus grape, the backbone of traditional cava now increasingly bottled as a serious still white. Impro-Visació is built entirely from old-vine Xarel-lo, showcasing the variety's natural grip and salinity outside the sparkling format.

Expect a textural, savoury white with citrus pith, herbs and a faintly saline finish. Serve cool alongside shellfish, tapas or aromatic salads, it has the structure to handle assertive herbs and the freshness for lighter seafood plates.
