The 2008 Brut Cuvée Nicolas François was disgorged during the third quarter of 2022 with less than three grams per litre. It has a delicate, pure, clean bouquet with aromas of orchard fruits, spring flowers, honey and liquorice, with hints of brioche and pastry with aeration. Medium to full-bodied, chiselled and crystalline, with racy acids and a chalky texture, the palate is tense and the finish is long, penetrating and salty. It exhibits perfect Billecart style, yet tension is present, a sign of the vintage.
The 2007 Brut Cuvée Nicolas François continues to show beautifully, wafting from the glass with scents of sweet orchard fruit, citrus oil, clear honey, white flowers, buttery pastry and warm biscuits. Medium to full-bodied, fleshy and incisive, with racy acids, a vibrant core of fruit and a pillowy, elegant profile, it concludes with a long, penetrating finish.
The 2002 Brut Cuvée Nicolas François was disgorged in January 2015 with four grams per liter dosage, and it's showing superbly, wafting from the glass with a complex bouquet that mingles confit citrus, peach and dried papaya with nuances of iodine, brioche and honeycomb. On the palate, it's full-bodied, broad and vinous, with a rich and layered core that's underpinned by serious structure and tension, concluding with a long and precise finish. This is one of the finest wines Billecart has released in the last decade, and it is well worth seeking out.

In 1668, Dom Pérignon is said to have discovered how to make sparkling wine; today his technique is used the world over, although Champagne continues to make some of the finest. France’s most northerly wine region, Champagne is now home to 15,000 growers and 290 ‘houses’. A blend of grape varieties is usually required: white Chardonnay to add fruit and elegance, and two reds – Pinot Noir and Pinot Meunier – to provide body and backbone.
