The house was established in the 19th century and remains one of the significant vermouth makers in Italy, a country with a centuries-long tradition of fortified wine production. Cocchi specializes in vermouth di Torino, the protected designation for vermouths produced in Turin following specific regulations regarding ingredients, production methods, and aging.

Vermouth di Torino is distinguished by its darker color, fuller body, and sweeter profile compared to its French counterparts. The category requires the use of wine from Piedmont as its base, combined with a botanical infusion that typically includes herbs, roots, and spices. Cocchi's approach reflects this tradition while maintaining the house's own proprietary recipe and aging protocols. Le Piémont (Piedmont) occupe la majeure partie du nord-ouest de l'Italie, bordant la Suisse au nord et la France à l'ouest et s'approchant presque de la côte méditerranéenne. Sa capitale et plus grande ville est Turin (Torino).

Dans le monde du vin, le Piémont est surtout connu pour les deux géants du Barolo et du Barbaresco, ainsi que pour d'autres vins rouges populaires élaborés à partir de Barbera et de Dolcetto, le blanc Gavi et le pétillant Asti.

Il compte plus d'appellations AOCG (17) et d'AOC (42) que toute autre région (voir cartes : région d'Asti, Langhe, Monferrato et nord), mais pas d'IGP. En 2016, le Piémont a produit 2,5 millions d'hl (28,3 millions de caisses) de vin, dont la majorité (55 %) en rouge et 83 % au niveau AOP. Les principaux cépages de la région sont le Barbera (31 %), le Moscato (22 %), le Dolcetto (13 %) et le Nebbiolo (10 %).
