Tasting notes

Luminous pale gold with green highlights, this Grand Cru Chablis opens with lifted aromas of white peach, lemon zest, crushed oyster shell, and white flowers, underpinned by the appellation's signature flinty minerality. On the palate, flavors of ripe citrus, green apple, and toasted brioche are framed by vibrant, focused acidity and a rich, textured mid-palate. The finish is long, saline, and persistently mineral, revealing the power and elegance characteristic of the Valmur climat.

About this wine

Jean-Paul et Benoit Droin make this Chablis from Valmur, one of the seven Grand Cru climats on the right bank of the Serein. Pure Chardonnay, grown on the Kimmeridgian limestone and marl that define Chablis's finest sites, vinified to show that terroir rather than the winemaker's hand.

Expect a structural, mineral-driven white with taut acidity, a saline edge and real depth on the mid-palate. Serve at cellar temperature with shellfish, oily fish, roast pork or a ripe wedge of Brie.
