About this rum
Diplomático is a Venezuelan rum producer working from the sugarcane-rich foothills of the Andes, where a cooler, high-altitude climate slows fermentation and shapes spirits of unusual depth. Their Single Vintage expression draws from a single year's distillation, aged in oak to develop the richness and complexity that defines the house.
Expect dark rum character: molasses, dried fruit, warm baking spice and a long, smooth finish. Serve neat after dinner or alongside dark chocolate, aged cheeses, or a cigar, this is a sipping rum that rewards attention.
The Diplomatic Reserve
Ingredients
- 60 ml Diplomatico Single Vintage 2002 Rum
- 20 ml Cognac (VSOP)
- 15 ml Amontillado Sherry
- 10 ml Crème de Cacao (dark)
- 2 dashes Angostura Bitters
- 1 dash Orange Bitters
- 1 sugar cube
Method
- Place the sugar cube in a mixing glass and muddle gently with both bitters until partially dissolved.
- Add the Diplomatico rum, Cognac, Amontillado Sherry, and Crème de Cacao to the mixing glass.
- Fill the mixing glass with large ice cubes and stir continuously for 45 seconds until properly chilled and diluted.
- Strain through a fine mesh strainer into the prepared glass over one large ice cube.
- Express the oils from an orange peel over the surface and discard the peel.
Serve
Rocks glass (preferably crystal), garnished with a single large ice cube and a thin strip of candied orange peel positioned across the rim. Serve with a small silver bar spoon resting in the glass.
