The Eight Year Reverie

Ingrediënten

60 ml Roger Groult 8 Years Calvados
20 ml dry vermouth
15 ml Crème de Cassis
10 ml fresh lemon juice
5 ml honey syrup
2 dashes Angostura bitters
Ice for stirring

Bereiding

Add the Calvados, dry vermouth, Crème de Cassis, fresh lemon juice, honey syrup, and Angostura bitters to a mixing glass filled with ice.
Stir continuously for 12-15 seconds until the mixture is properly chilled and diluted.
Strain through a fine sieve into a chilled coupe glass.

Serveren

Serve in a chilled coupe glass. Garnish with a single strip of candied apple peel (approximately 5cm long) placed horizontally across the rim. Express the oils from a fresh lemon twist over the surface before placing it in the glass as a secondary garnish. The drink should be presented with a slight chill visible on the exterior of the glass.
