Sangiovese is the principal red grape variety of Tuscany and Italy's most widely planted native cultivar. Its origins trace to central Italy, where it has been documented since at least the 14th century, though its exact lineage remains debated among ampelographers. The name likely derives from "sangue di Giove" (blood of Jupiter), reflecting its cultural significance in the region. The variety thrives in the rolling hills and clay-limestone soils of Tuscany, where warm days and cool nights allow it to develop complexity while maintaining natural acidity.
Sangiovese produces wines with distinctive characteristics: bright acidity, firm tannin structure, and flavour profiles centred on red cherry, plum, and earth. Aromas commonly include dried herbs, tobacco, and iron minerality. The wines typically display medium to full body depending on clone, vineyard site, and winemaking approach. Its acidity makes it naturally food-friendly and age-worthy, with many examples improving over decades. Single-varietal expressions tend toward elegance and restraint rather than power, though some modern interpretations emphasize riper fruit and softer tannins.
The variety is fundamental to several major appellations: Chianti Classico DOCG and Vino Nobile di Montepulciano DOCG require minimum percentages of Sangiovese, while Brunello di Montalcino DOCG mandates 100% Sangiovese. Each region imparts distinct character—Brunello typically shows greater structure and longevity, while Chianti Classico often emphasizes freshness and drinkability. Sangiovese's natural acidity and tannin profile pair well with tomato-based dishes, cured meats, aged cheeses, and roasted game. It performs particularly well alongside rustic Tuscan cuisine.
