The Roost - A 27 Year Meditation

Ingredients

  • 60 ml Redbreast Cask Strength 27 Years
  • 15 ml Amontillado sherry
  • 10 ml Benedictine DOM
  • 2 dashes Angostura bitters
  • 1 dash orange bitters
  • 1 large hand-cut ice cube

Method

  1. Chill a rocks glass by filling it with ice and setting aside for 2 minutes, then discard the ice.
  2. Combine the Redbreast, Amontillado sherry, Benedictine DOM, and both bitters in a mixing glass.
  3. Fill the mixing glass with ice and stir continuously for 45 seconds until properly diluted and chilled.
  4. Strain the mixture into the prepared rocks glass over the single large ice cube.
  5. Allow the drink to rest for 10 seconds before serving.

Serve

Rocks glass with a single large hand-cut ice cube. Express the oils from a 5cm strip of orange peel over the surface, then place the peel on the rim of the glass. Add a single dried cherry speared on a cocktail pick, resting across the rim.
