About this rum
Pyrat Cask 1623 is a dark rum bottled under the Pyrat label, a brand associated with aged Caribbean-style spirits finished to a rich, mature profile. The name references long barrel maturation, and the spirit sits at the premium end of the dark rum category.
Expect dried fruit, toffee and warm spice on the palate, with the smooth, rounded texture that comes from extended oak contact. Serve neat or over a single large ice cube; it works equally well as a considered digestif after a long dinner at anchor.
The Cask Keeper's Legacy
Ingredients
- 60 ml Pyrat Cask 1623 Rum
- 20 ml Cognac XO
- 15 ml Amontillado Sherry
- 10 ml Crème de Cacao (dark)
- 2 dashes Angostura bitters
- 1 dash orange bitters
- 1 sugar cube
- Expressed orange peel oils
Method
- Place the sugar cube in a mixing glass and add both types of bitters.
- Gently muddle the sugar cube until partially dissolved.
- Add the Pyrat Cask 1623 Rum, Cognac XO, Amontillado Sherry, and Crème de Cacao to the mixing glass.
- Fill the mixing glass with large ice cubes and stir for 45 seconds until properly chilled and diluted.
- Strain through a fine mesh strainer into the prepared glass over one large, single ice cube.
- Express the orange peel oils over the surface of the cocktail and drop the peel into the glass as garnish.
Serve
Rocks glass (preferably crystal), single large ice cube, orange peel twist expressed over the drink and resting on the rim, served with a small silver bar spoon for stirring.
