You can tell this Chablis is made from vineyards on the Serein's left bank by its chalky minerality. There, close to Milly, the hamlet at the base of the Cote de Lechet, are several Dauvissat properties. This wine is huge, intense, and wide open on the tongue with a long, rich finish that is fueled by that minerality. It is made with deep cherry fruit and lemon drop (orange, actually) acidity.
