Haku

Located in the heart of the picturesque Loire Valley, Domaine de la Noblaie is a small, family-owned winery that has been producing exceptional wines for over a century. With a commitment to sustainable viticulture and a deep respect for the land, this winery has become a beloved producer in the region and a favorite among wine enthusiasts.

The winery is situated in the small village of Ligré, within the Chinon appellation. This region is known for its unique terroir, with its rolling hills and clay-limestone soils that lend themselves perfectly to the cultivation of Cabernet Franc grapes. Domaine de la Noblaie takes full advantage of this terroir, producing elegant and complex wines that truly reflect the characteristics of the land.

The winery is led by Jérôme Billard, a fifth-generation winemaker who has inherited a passion for winemaking from his ancestors. Under his direction, the winery has embraced sustainable farming practices, using organic and biodynamic methods to cultivate their vineyards. This commitment to the environment not only produces healthier grapes, but also ensures that the land will continue to thrive for generations to come.

One of the most impressive aspects of Domaine de la Noblaie is their dedication to producing single-vineyard wines. Each of their wines is made from grapes grown in a specific plot of land, allowing for a truly unique expression of the terroir. Their flagship wine, the Chinon Cuvée des Moines, is made from grapes grown in a 1.5-hectare vineyard with soils rich in tuffeau, a type of limestone unique to the region. This wine is a perfect example of the elegance and complexity that can be achieved with Cabernet Franc in the Loire Valley.

In addition to their Chinon wines, Domaine de la Noblaie also produces other varietals such as Chenin Blanc and Sauvignon Blanc. Their wines have received numerous accolades

Haku

Haku is a Japanese vodka produced by Suntory, one of Japan's most established distilling companies. The spirit is made using 100% Japanese white rice as its base ingredient, which distinguishes it from the majority of vodkas produced elsewhere, which typically use grains such as wheat or rye, or neutral spirit derived from other agricultural sources.

The production process involves fermenting and distilling the rice before filtering the vodka through bamboo charcoal, a traditional Japanese purification method. This combination of rice and bamboo charcoal filtration gives Haku a noticeably soft, slightly sweet character on the palate, with a gentle roundness that reflects the qualities associated with rice-based spirits in Japanese craftsmanship. The name "Haku" means "white" in Japanese, a reference to the white rice at the heart of the recipe.
