Palomino is a white grape variety indigenous to southern Spain, where it has been cultivated for centuries in the chalky albariza soils of Andalusia. The grape finds its ideal growing conditions in the coastal climate of the Jerez triangle, benefiting from the Atlantic influence and the region's distinctive soil composition. While historically grown across various parts of Spain, Palomino has become synonymous with the Jerez region, where it accounts for the vast majority of vineyard plantings.
As a table wine, Palomino produces light, neutral whites with low acidity and subtle fruit character. However, the grape's true expression emerges through the traditional solera aging system used in sherry production. Under flor yeast, Palomino develops the distinctive nutty, saline qualities found in Fino and Manzanilla sherries. When aged oxidatively, it transforms into the rich, complex flavors of Amontillado and Oloroso styles, displaying notes of almonds, dried fruits, and maritime salinity.
The Jerez-Xérès-Sherry appellation represents Palomino's most significant expression, where the grape undergoes biological or oxidative aging to create the region's renowned fortified wines. These sherries range from bone-dry Finos with their characteristic yeasty complexity to rich, concentrated Olorosos. The wines pair exceptionally well with Iberian ham, Manchego cheese, olives, and seafood, reflecting their deep connection to Andalusian cuisine.
