The Prosecco DOC represents the largest designation for Prosecco production, covering nine provinces across Veneto and Friuli-Venezia Giulia. Wines from this appellation are typically produced using the Charmat method, where secondary fermentation occurs in pressurized tanks rather than individual bottles. This technique preserves the fresh, fruity characteristics of the Glera grape while creating the fine perlage that defines quality Prosecco. The resulting wines generally display bright acidity, delicate floral aromatics, and flavors ranging from green apple and pear to citrus.

Bele Casel works exclusively with Glera grapes to produce their Prosecco, offering an Extra Dry style from the Asolo area within the broader Prosecco DOC zone. Extra Dry Prosecco contains between 12-17 grams of residual sugar per liter, positioning it between the drier Brut category and the sweeter Dry designation.
