Ontario is Canada's largest cool-climate wine region and home to Ice Wines . Donald Ziraldo pioneered the use of the Vidal hybrid grape variety, created by crossing Ugni Blanc (Trebbiano) and Rayon d'Or. Harvest occurs when temperatures reach -12°C. The grapes are then pressed quickly to extract only a small amount of highly concentrated juice. This 100% Vidal has a golden amber color. On the nose, it offers lingering aromas of mango and peach with a touch of barley sugar. Voluptuous on the palate, with sweet, pronounced aromas of papaya and nectarine wrapped in a biting acidity. The finish is smooth and silky with a hint of ginger.
