Santa Maria's Golden Voyage
Ingredients
- 45 ml Santa Maria - Gold Rum
- 20 ml Cognac VSOP
- 15 ml Honey Syrup
- 10 ml Fresh Lemon Juice
- 5 ml Amaro Averna
- 2 dashes Angostura Bitters - 1 Egg White
Method
- Pour honey syrup into a mixing glass and warm gently with hot water, then discard the water
- Add Santa Maria - Gold Rum, Cognac VSOP, fresh lemon juice, Amaro Averna, and Angostura Bitters to the mixing glass
- Add egg white to the same mixing glass
- Dry shake vigorously without ice for 15 seconds to emulsify the egg white
- Add fresh ice to the mixing glass
- Shake vigorously for 12 seconds until well-chilled
- Double strain through a fine mesh strainer into the prepared glass
Serve
Serve in a coupe glass chilled to 4°C. Garnish with a 5cm-long expressed lemon twist placed delicately on the foam surface. Top the foam with 3 drops of 18-year aged balsamic vinegar arranged in a triangle pattern. Present with the glass on a dark slate coaster.
