The Chablis 1er Cru Fourchaumes comes from a single hectare of 50-year-old vines aged in 70% stainless steel and 30% in used barrel, plus another five months aging on the fine lees. It has a pretty apple blossom nose. The palate is simple and easy-going, quite terse on the entry with good acidity, although it needs to demonstrate more complexity and terroir expression on the finish. It is a very charming wine.

About this wine
Isabelle and Denis Pommier are a husband and wife team who have been producing exceptional wines in the Chablis region for over 20 years. Their vineyards are located in the prestigious Fourchaume area, which is known for producing some of the finest Premier Cru wines in the region. The Pommiers are committed to sustainable and organic farming practices, which they believe are essential for producing high-quality wines that truly reflect the terroir of the region. They use minimal intervention in the vineyard and cellar, allowing the natural flavours and aromas of the grapes to shine through in their wines.
Their Premier Cru Chablis from the Fourchaume vineyard is a perfect example of their commitment to quality and tradition. This wine is made from 100% Chardonnay grapes, which are hand-harvested and carefully sorted to ensure only the best fruit is used. The wine is then aged in oak barrels for 12 months, which gives it a rich, complex flavour profile with notes of citrus, honey, and toasted oak.
The Pommiers' Premier Cru Chablis is a wine that truly captures the essence of the region. It is elegant and refined, with a crisp acidity and a long, lingering finish. It is a wine that can be enjoyed on its own or paired with a wide range of dishes, from seafood to poultry to creamy pasta dishes.
Overall, Isabelle and Denis Pommier are producers who are dedicated to producing exceptional wines that truly reflect the terroir of the Chablis region. Their Premier Cru Chablis from the Fourchaume vineyard is a testament to their commitment to quality and tradition, and is a wine that is sure to impress even the most discerning wine connoisseur.
