Tasting notes
World-renowned Japanese whiskey since winning first prize in its category at the 2010 World Whiskey Awards. HIBIKI 17 Year Old is an excellent whiskey blended from malt and grain whiskey from the three major distilleries owned by Suntory (Yamazaki , Hakushu and Chita). Originally released in 1989, this superb whiskey is aged in Japanese mizunara oak barrels in Yamazaki. Hibiki 17 years old is now a rare whiskey since production was stopped. Very complete whisky, extremely easy to drink while being complex and seductive, with flavors and a truly astonishing finish. Notes of rose, peach, melon, and citrus on the nose. Caramel palate, notes of butter, Mizunara and vanilla. Elegant and fruity finish, sweet, ending on a bitter citrus note.

About this whisky
Hibiki is a Japanese whisky producer that has been crafting exceptional whiskies for over a century. The Hibiki 17-year-old is a blend of malt and grain whiskies that have been aged for at least 17 years in a variety of casks, including American white oak, sherry and Japanese Mizunara oak. This unique combination of casks gives the whisky a complex and layered flavour profile that is both rich and delicate.
The history of Hibiki dates back to 1923 when the Yamazaki distillery was founded by Shinjiro Torii. Torii was a visionary who saw the potential for whisky in Japan and set out to create a unique style of whisky that would reflect the country's culture and traditions. He was joined by Masataka Taketsuru, who had studied whisky-making in Scotland, and together they created the first Japanese whisky.
The Hibiki 17-year-old is a testament to the skill and expertise of the master blenders at Hibiki. The whisky is made using a variety of malt and grain whiskies that have been carefully selected and blended to create a harmonious and balanced flavour profile. The use of Mizunara oak casks, which are rare and expensive, adds a distinctive Japanese character to the whisky.
The production process for Hibiki 17-year-old is a closely guarded secret, but it is known that the whisky is made using only the finest ingredients and traditional methods. The malted barley is sourced from Scotland and the water used in the production process comes from the nearby mountains. The whisky is distilled in copper pot stills and then aged in a variety of casks for at least 17 years.
The result is a whisky that is rich and complex, with notes of honey, vanilla, oak and spice. The nose is full of floral and fruity aromas, with hints of apricot, peach and rose petals. On the palate, the whisky is smooth and creamy, with a long and satisfying finish.
Hibiki 17-year-old is a whisky that is highly sought after by collectors and connoisseurs alike. Its unique flavour profile and exceptional quality have earned it numerous awards and accolades over the years. It is a whisky that truly embodies the spirit of Japan and the art of whisky-
