Indigenous yeast and old oak barrels add a richness and complexity to this Sauvignon. Its pale straw in colour, with a reductive notes of nuts, charred toast and lemon pith, the grass and herbal notes taking a back seat. The palate is ready in texture, buoyed by crystalline acidity. There's length, balance and a long lemony finish. A solid pairing with rich, herb-flecked dishes.
It starts reductively, with wax, onion and salty notes but opens with air to something more buttery, like a Chardonnay, with citrus, stone fruit and green herbal aromas at the rear.
This Wild Sauvignon features toasty accents to it layers of ripe nectarine and pineapple. It's medium-bodied, reasonably rich and textured on the palate, then it weakens a bit on the finish.
