Domaine Billaud-Simon is a renowned producer of Chablis wines, with a history dating back to the early 19th century. The estate is located in the heart of the Chablis region, in the village of Chablis itself, and is known for its exceptional Grand Cru wines.

The Les Clos vineyard is one of the most prestigious in the Chablis region, and Domaine Billaud-Simon's Grand Cru Les Clos is a true masterpiece. This wine is made from 100% Chardonnay grapes, which are carefully selected and hand-harvested to ensure the highest quality.

The style of production at Domaine Billaud-Simon is traditional, with a focus on minimal intervention in the vineyard and winery. The grapes are fermented in stainless steel tanks, and the wine is aged in oak barrels for a period of 12 to 18 months, depending on the vintage.

The resulting wine is a beautiful expression of the Chablis terroir, with a pale gold color and aromas of citrus, white flowers, and minerality. On the palate, the wine is crisp and refreshing, with flavors of lemon, green apple, and a hint of oak. The finish is long and elegant, with a touch of salinity that is characteristic of Chablis wines.

Domaine Billaud-Simon's Grand Cru Les Clos is a wine that will age gracefully for many years, developing even more complexity and depth over time. It is a perfect match for seafood dishes, particularly oysters and shellfish, as well as creamy cheeses and poultry dishes.

Overall, Domaine Billaud-Simon is a producer that is synonymous with quality and tradition in the Chablis region. Their Grand Cru Les Clos is a true masterpiece, and a must-try for any wine lover.

Aromas of sweet yellow citrus fruit, beeswax, white flowers, and fresh pastry preface the Chablis Grand Cru Les Clos, a full-bodied, satiny-textured, and multidimensional wine that's layered, concentrated and powerful, with a lively line of acidity and a precise, saline finish. It will demand some patience.
The 2018 Chablis Grand Cru Les Clos has turned out well, wafting from the glass with aromas of golden orchard fruit, citrus oil, dried white flowers and drawn butter. Medium to full-bodied, satiny and enveloping, it's bright and lively, with a fleshy core of fruit, succulent acids and a delicate, mineral finish.
The 2016 Chablis Grand Cru Les Clos is the most reserved wine in the range, unfurling slowly with aromas of citrus zest, spring flowers and iodine that I'd expect to show more generosity with a few years' bottle age, while retaining its classic outlines. On the palate, it's medium to full-bodied, deep and foursquare, with a concentrated, tight-knit profile and a tense, stony finish.

Domaine Billaud-Simon is one of the most emblematic producers of Chablis, which expresses the richness of its wine heritage through a very expressive, unique and personal style of its wines. Domaine Billaud-Simon produces Chablis wines where the airy freshness of the mouth combines admirably with the full maturity of the fruit and the mineral terroir.

Bought in 2014 by Maison Faiveley, Domaine Billaud-Simon has retained all the spirit of this bicentennial estate.

The French Wine region of Burgundy (aka “Bourgogne”) may be small in size, but its influence is huge in the world of vino. The complexity of Burgundy can cast fear into the heart of even a seasoned wine pro, but fear not – the region need only be as complicated as you want it to be. Yes, it is home to some of the most expensive wines in the known universe, but there are also tasty and affordable wines.

Main grapes:

Pinot Noir originated in Burgundy and these vines cover 34% of the region, accounting for 29% of overall wine production. The red grape does extremely well in limestone and clay soil, which helps create their complexity. Pinot Noir wines from Burgundy range in colour from cherry to brick, are light in body, and typically have red fruit and spicy flavours. Gamay is a red grape also grown in Burgundy, but only makes up 10% of the vines.

Chardonnay is the primary grape for white wines in Burgundy, making up 48% of the vines and 68% of production. Chardonnay appreciates Burgundy’s marl soil, which gives it delicate floral, fruit, and mineral aromas and full-bodied flavours. Aligoté is the second white grape, accounting for 6% grown. {Read more about the ancient Aligoté grape in Burgundy.}

The region does produce a sparkling wine called Crémant de Bourgogne. It can be made from Chardonnay, Pinot Noir, Pinot Gris, Aligoté, Gamay, Sacy, and Melon. Varieties include blanc, blanc de blancs, blanc de noirs, and rosé.
