Verdejo is a white grape variety native to the Rueda region of northwest Spain, where it has been cultivated since at least the 11th century. The grape thrives in continental climates with significant diurnal temperature variation, allowing it to retain acidity while developing flavor complexity. While historically used for fortified wines, modern winemaking techniques have transformed Verdejo into one of Spain's most respected white varietals.
Verdejo produces wines with distinctive herbal and mineral characteristics, often displaying notes of fennel, white flowers, and citrus fruits. The grape naturally possesses good acidity and can develop a slightly bitter almond finish that adds complexity. Wines range from light and crisp when harvested early to more full-bodied expressions with extended lees contact, capable of developing honeyed and nutty flavors with age.
The Rueda DO remains Verdejo's primary stronghold, where the grape represents the majority of plantings and produces some of Spain's finest white wines. These wines pair excellently with seafood, particularly shellfish and grilled fish, as well as vegetarian dishes featuring herbs and green vegetables. The grape's natural acidity and mineral backbone make it particularly suitable for oysters and other briny preparations.
