Bobal is a dark-skinned grape native to Spain, where it has been cultivated for centuries in the central regions of the Iberian Peninsula. It thrives in the hot, continental climate of Castilla-La Mancha, particularly in areas like Manchuela, where the grape's thick skin and vigorous vines are well-suited to intense summers and water-stressed conditions. While historically used primarily for bulk wine production, Bobal has gained recognition in recent decades as producers have begun crafting more serious expressions of the variety.

Wines made from Bobal typically display dark red and black fruit characteristics—blackberry, plum, and cherry—with herbal and sometimes peppery undertones. The grape's thick skin contributes to wines with firm tannin structure and good acidity, often resulting in medium to full-bodied reds with aging potential. The flavour profile tends toward earthy, rustic qualities rather than fruit-forward opulence, and alcohol levels vary depending on vineyard management and winemaking approach.

Bobal is most significantly planted in Manchuela and other DO regions of Castilla-La Mancha, where it remains the principal red variety. These wines pair well with roasted and grilled meats, cured Spanish charcuterie, and hearty stews. The grape's structure and acidity also make it a versatile match for tapas-style dining and Mediterranean cuisine.
