Tasting notes

Hanahato is a Koshu sake aged 8 years in a stainless steel tank - ageing in a stainless steel tank aims to let the sake evolve in the most neutral and natural way possible. Aged sake is not common in the world of sake, but some houses have made it a speciality. This is the case for Enoki Shuzo with Hanahato, which is also Kijoshu, that is, produced by adding sake during the fermentation stages. A beautiful amber colour, it is rich and round in the mouth, with an incredible elegance reminiscent of a Port. It is mature, dense, smooth, clean and well-balanced. A complexity that is found on the finish, a nice length and tension.

About this sake

Enoki Shuzo is a Japanese sake brewery that has been producing high-quality sake for over 150 years. Located in Hiroshima prefecture, which is known for its high-quality rice and water, two essential ingredients in sake production, Enoki Shuzo is renowned for its Hanahato Kijoshu, an aged sake that has been matured for eight years. This premium sake is made using Yamadanishiki rice, which is polished to 60% of its original size to remove impurities and allow for a cleaner, more refined flavour. The sake is then brewed using traditional methods, including the use of a wooden press, and aged for eight years in wooden barrels. This ageing process allows the sake to develop a complex flavour profile, with notes of caramel, dried fruit, and nuts.

Hanahato Kijoshu is best enjoyed on its own or paired with rich, flavourful dishes such as grilled meats or cheese. Its unique flavour profile and long ageing process make it a highly sought-after sake that is sure to impress even the most discerning sake connoisseur. Enoki Shuzo's commitment to producing high-quality sake using traditional methods has made it one of the most respected sake breweries in Japan, and its products are highly sought-after by sake enthusiasts around the world.
