Tasting notes
Quite similar to the wine bottled by the Almacenista himself, the NV Palo Cortado de Jerez Almacenista Cayetano del Pino was selected from 22 botas aged in Jerez, which must have at some point held wine aged under flor, as it's sharp and pungent while it also has some creaminess and it's very long, lifted by a spirity finish. The wine is around 20 years of age and is a textbook example of what a Palo Cortado should be.

About this wine
Lustau's Palo Cortado represents one of Jerez's most elegant and complex sherry styles. This rare category sits between the delicate finesse of Amontillado and the richness of Oloroso, creating a wine of remarkable depth and sophistication. Crafted from Palomino grapes grown in the chalky albariza soils of Andalucía's Jerez region, Palo Cortado develops under a dynamic combination of biological and oxidative aging, resulting in a full-bodied expression with remarkable balance and a long, persistent finish.
The Almacenista designation indicates this sherry has been selected and aged by an independent producer, Cayetano del Pino y Cía, adding a layer of authenticity and craftsmanship. At 18.5% ABV, the wine delivers a warm, complex character ideal for discerning palates. Palo Cortado excels alongside charcuterie, cured meats, aged and blue cheeses, and roasted nuts, making it equally suited to sophisticated aperitifs or as a contemplative digestif. For those seeking a serious Jerez-Xeres-Sherry with depth and nuance, this Lustau selection offers exceptional character and versatility.
