Tasting notes
The 2018 Chablis 1er Cru La Forest is also showing well, opening in the glass with aromas of crisp green orchard fruit, citrus oil, beeswax, honeycomb and oyster shell. Medium to full-bodied, layered and textural, it's fleshy and enveloping, with a lovely spine of acidity and a long, saline finish. Like the Vaillons, this is quite demonstrative for a young Dauvissat Forest, and it will deliver considerable pleasure straight out of the gates.

About this wine
Domaine Vincent Dauvissat is one of Chablis' most respected producers, crafting wines of precision and elegance from the region's distinctive terroir. Located in Burgundy's northernmost wine zone, Dauvissat's vineyards benefit from cool-climate conditions and mineral-rich limestone soils that define authentic Chablis character. The domaine practices traditional winemaking, allowing the pure expression of Chardonnay to shine through each vintage.
La Forest 1er Cru represents the pinnacle of the Premier Cru classification, showcasing the stony minerality and crisp citrus fruit that Chablis is celebrated for. This white wine balances structure with freshness, displaying the bright, focused character expected from this prestigious appellation. The elegant profile makes it exceptionally versatile at the table, pairing beautifully with shellfish, white fish, lobster, and crab. It also complements lighter poultry dishes, mushroom-based preparations, fresh salads, and creamy cheeses like Brie and goat cheese, making it an ideal choice for fine dining and sophisticated entertaining.
