A 70-30 blend of Sauvignon Blanc and Sémillon, the Castello della Sala 2022 Conte della Vipera offers a crisp and reductive style of winemaking that prizes clarity, aromas and focus. The 2021 vintage saw classic growing conditions and was not too hot. This pretty wine offers tremendous value thanks to citrus, lime and orange blossom. The Sémillon gives more roundness to the palate. No oak is used.
The blending formula in the Castello della Sala 2020 Conte della Vipera has been tweaked just a bit to increase the presence of Sémillon, which now accounts for 30% of the blend. The rest is Sauvignon Blanc. This refreshing white was first produced in 1997, and back then the blend saw Sauvignon Blanc paired with Chardonnay. This is a zesty and expressive white with delightful aromas of tropical fruit and tomato leaf, all backed by a pinch of freshly milled white pepper. The added Sémillon builds up the soft fruitiness of the wine in what is an ample 107,000-bottle production from the Antinori family's estate in Umbria.
Conte della Vipera 2019 is straw yellow with light greenish and golden hues. Its nose opens with intense notes of white flowers that blend with aromas of grapefruits, figs and ginger. On the palate it’s fresh, vibrant and savoury with nuances of citron peel, aromatic herbs and elderflowers.
The Umbrian Conte della Vipera of the Marchesi Antinori takes its name from the first owners of the Castello della Sala, the Monaldeschi della Vipera family. It is mainly produced with Sauvignon Blanc grapes and Sèmillon grapes, harvested strictly by hand. After the soft pressing of the grapes, the must ferments in stainless steel tanks at a controlled temperature of 16°C, and then the wine ages in the same containers at a controlled temperature of 10°C before being bottled. Conte della Vipera is characterised by a straw yellow colour with greenish reflections. The nose opens with intense citrus aromas, enriched by pleasant and light nuances of boxwood. On the palate, it is well structured and harmonious, savoury and sweet at the same time, with an aftertaste reminiscent of grapefruit.

Castello Della Sala is a renowned wine producer located in the Umbria region of Italy. The winery has a rich history dating back to the 14th century when it was first established by the noble family of Monaldeschi. The castle, which is the centerpiece of the estate, was built in the 16th century and has been beautifully preserved over the years.

The winery is known for its production of high-quality white wines, particularly its signature wine, Cervaro della Sala. This wine is made from a blend of Chardonnay and Grechetto grapes and is aged in oak barrels for several months to give it a rich and complex flavor profile. Other notable white wines produced by Castello Della Sala include Bramito del Cervo and Antinoo.

In addition to its white wines, Castello Della Sala also produces a range of red wines, including the popular Chianti Classico and Rosso di Montalcino. These wines are made from Sangiovese grapes and are aged in oak barrels to give them a full-bodied and robust flavor.

Umbria is a region in central Italy that is known for its rich history and beautiful landscapes. The region is also home to some of the finest wines in Italy, including the famous Sagrantino di Montefalco.

The production of wine in Umbria dates back to ancient times, with the Etruscans being the first to cultivate grapes in the region. Today, Umbria is home to a number of different grape varieties, including Sangiovese, Merlot, Cabernet Sauvignon, and Sagrantino.

Sagrantino is the most famous wine produced in Umbria, and it is known for its deep, rich flavor and high tannin content. This wine is made from the Sagrantino grape, which is only grown in the Montefalco area of Umbria. Sagrantino di Montefalco is a DOCG wine, which means it is subject to strict production regulations to ensure its quality.

In addition to Sagrantino, Umbria is also known for its white wines, including Grechetto and Trebbiano Spoletino. These wines are crisp and refreshing, with notes of citrus and tropical fruit.

Overall, Umbria is a region that is rich in history and culture, and its wines are a reflection of this. Whether you are a fan of bold reds or crisp whites, there is something for everyone in Umbria's wine scene.
