About this brandy

La Cigogne - Eau de Vie de Poire William

La Cigogne makes this Eau de Vie de Poire William in France. It is a clear, brilliant fruit brandy bottled at 45% abv, and it is built around a single fruit: the Williams pear, in a spirit rather than a sweet liqueur.

The nose is intensely perfumed, with ripe Williams pear, white blossom and a touch of honey. The palate is clean and silky, with juicy pear flesh, a little almond and light floral notes. The alcohol warms without harshness and gives the fruit structure. The finish is long, fragrant and delicately fruity.

The spirit is made from Williams pears, a variety with aromatic, juicy flesh. Eau de vie is about fidelity to the fruit, and this follows that line: the pear leads and nothing competes with it.

Serve it neat, as a digestif. Its signature cocktail is The Stork's Flight. At the table, pair it with a cheese plate, nuts and seeds, fruit-based desserts, cakes or chocolate.

The Stork's Flight

Ingredients

  • 45 ml La Cigogne Eau de Vie de Poire William
  • 20 ml Cognac VSOP
  • 15 ml Crème de Cassis
  • 10 ml Fresh Lemon Juice
  • 8 ml Honey Syrup
  • 2 dashes Angostura Bitters
  • Splash Champagne or Crémant

Method

  1. Pour the La Cigogne Eau de Vie de Poire William, Cognac VSOP, Crème de Cassis, fresh lemon juice, and honey syrup into a cocktail shaker filled with ice.
  2. Add two dashes of Angostura Bitters to the shaker.
  3. Shake vigorously for 12-15 seconds until well-chilled.
  4. Fine strain into a chilled coupe glass.
  5. Top with a splash of Champagne or Crémant (approximately 20 ml).
  6. Stir gently to combine.

Serve

Serve in a chilled coupe glass. Garnish with a thin slice of fresh pear suspended on the rim and a single candied pear cube placed at the bottom of the glass. Express the oils from a lemon twist over the surface and place it alongside the pear slice. Serve immediately while effervescence is active.
