Tasting notes
Nutty, waxy nose with hints of green apple and toasted almond typical of the Jura. Palate is dry, saline and textured, orchard fruit laced with a faint oxidative edge. Finish is long, mineral and gently tangy.

About this wine
Jean Macle makes his Côtes du Jura in the heart of the Jura, a region built on savagnin and chardonnay and famous for wines that shrug off convention. This bottling sits at the more approachable end of the Jura spectrum, without the deliberate oxidative stamp of a vin jaune.
Expect a white with grip and a saline, nutty edge, the kind of structure that shows well slightly cool. On board it works with Comté and other hard cheeses, roast chicken, or the richer end of a seafood spread where you want something with backbone rather than fruit alone.
