Tasting notes

Pale straw with subtle green reflections, this Ribolla Gialla opens with aromas of lemon zest, green apple, white peach and acacia blossom, layered with a delicate chalky, saline minerality. The palate is crisp and linear, with vibrant acidity framing flavors of citrus, pear and a hint of almond. The texture is fresh yet gently rounded, with a savory mineral thread running through the mid-palate. The finish is clean, bright and moderately long, leaving a refreshing touch of lemon peel and stone.

About this wine

Edi Simčič - Rebula - Ribolla Gialla

Edi Simčič's Rebula is a single-variety white made from Ribolla Gialla, the grape Slovenians call Rebula. It carries the Collio Goriziano DOC of Friuli-Venezia Giulia and sits at a moderate 13% alcohol.

Pale straw with green reflections. The nose opens on lemon zest, green apple, white peach and acacia blossom, with a chalky, saline edge beneath. The palate is crisp and linear, with bright acidity framing citrus, pear and a hint of almond. The texture is fresh but gently rounded, with a savoury mineral thread through the middle. The finish is clean and moderately long, closing on lemon peel and stone.

Ribolla Gialla is prized for its high natural acidity and citrus-led, mineral profile, and this bottling shows it plainly. Collio's hillsides, with their marl and sandstone soils, typically add stony tension and clarity of fruit.

Serve well chilled, as an aperitif or with the first course. The acidity suits shellfish and white fish, and it handles poultry, green vegetables and cheese with ease.
