Produced with the utmost rigour, this cuvée illustrates a distinctive Chenin Blanc de Loire. The vinification highlights the gourmet aromas of the other "noble" grape variety of the Loire. It is the expression of Chenin Blanc de Loire in the style of Florian Mollet. Rigorous selection of grapes by observation of the plots before harvest.
Cold pressing to preserve the fresh aromas of the grape variety. Fermentation at a controlled temperature lasts from 15 to 21 days and develops the fruity and savory aromas of the wine. He worked a third of the cuvée in wood to highlight the generous aromas of the grape variety and reveal its full potential.
