Blanc de Blancs is produced mainly from Clairette, Marsanne and Ugni Blanc grape varieties. The vines are cultivated in the Protected Designation of Origin Cassis vineyard. Clairette adds fat, aromatic complexity and freshness. Marsanne provides fruit, structure and length in the mouth. Ugni blanc is added to these two main grape varieties and brings fruit and additional freshness. It has a very expressive nose, a bouquet of citrus fruits and white flowers. The taste has complex with notes of citrus fruits and white-fleshed fruits. A very nice length in the mouth underlined by its freshness.

Domaine du Paternel - Blanc de Blancs - Cassis

If you're looking for a refreshing and crisp white wine that's perfect for a summer day, look no further than Domaine du Paternel's Blanc de Blancs from Cassis. This wine is made from 100% white grapes, specifically the Clairette and Marsanne varieties, and is a true expression of the terroir of Cassis.

The Domaine du Paternel has been producing wine in Cassis since the 17th century, and their Blanc de Blancs is a testament to their dedication to quality and tradition. The grapes are hand-harvested and carefully selected to ensure only the best fruit is used in the wine. The wine is then fermented in stainless steel tanks to preserve the freshness and fruitiness of the grapes.

On the nose, the Blanc de Blancs has a delicate aroma of white flowers and citrus fruits, with a hint of minerality. On the palate, the wine is crisp and refreshing, with a bright acidity that balances the fruitiness of the grapes. The Clairette grape brings a floral note to the wine, while the Marsanne adds a touch of richness and complexity.

This wine is perfect for pairing with seafood, especially oysters and shellfish. It's also a great match for salads and light summer dishes. If you're looking for a wine to enjoy on a warm day, try serving the Blanc de Blancs chilled, around 8-10°C.

Overall, Domaine du Paternel's Blanc de Blancs is a delicious and refreshing wine that's perfect for summer.
