Bonneau du Martray's Corton is a red Grand Cru from the hill of Corton in the Côte de Beaune, Burgundy, made entirely from Pinot Noir.
The nose leads with red fruit, then flowers, licorice and sweet spice. The palate is layered and refined, with texture and finesse mattering more than weight. The finish is resonant and perfumed, with a sweetness that stays with you.
Corton typically gives Pinot Noir more grip and structure than its perfume suggests, so the fruit carries a firm frame beneath it. That is why the wine can be delicious young but rewards patience.
It suits roast duck or guinea fowl, mushroom dishes and a well-aged hard cheese. Open it for a formal dinner, or with a simple roast bird, where it needs no accompaniment beyond good company.
