Tasting notes

Aromas of crisp notes of juniper alongside delicate floral sweetness, parma violets, a touch of citrus peel and some green vegetal notes in there too, with a pinch of spice. Wonderfully spicy notes on the palate, more prominent than on the nose, cardamom shining through and a scattering of cinnamon, with floral notes continuing. With a finish of lingering spices, along with the return of citrus peel.

Single candied violet placed delicately on top of the foam, 2cm strip of lemon peel expressed over the surface and draped along the rim's interior, one additional cardamom bitters dash applied directly onto the foam's center using a bar spoon

Ingredients

  • 60ml Aviation American Gin
  • 15ml Maraschino liqueur
  • 7.5ml Crème de violette
  • 22.5ml Fresh lemon juice
  • 30ml Egg white
  • 2 dashes Cardamom bitters
  • 7.5ml Lavender-infused simple syrup

Method

  1. Add all ingredients to a cocktail shaker without ice
  2. Perform a dry shake for 12-15 seconds to emulsify the egg white
  3. Add a large handful of fresh ice to the shaker
  4. Shake vigorously for 15 seconds until the exterior of the shaker frosts
  5. Double strain through a fine mesh strainer into the chilled glass
  6. Allow the foam to settle for 10 seconds before garnishing

Serve

Serve in a chilled coupe glass. Garnish with a single candied violet placed delicately on top of the foam, a 2cm strip of lemon peel expressed over the surface and draped along the rim's interior. Finish with one additional cardamom bitters dash applied directly onto the foam's center using a bar spoon for visual contrast.
