Traditionally, Palermo included wine that didn't make it into Mercury Head or Papillon, but winemaker Dave Phinney now buys some fruit specifically targeted for this bottling. The 2021 Cabernet Sauvignon Palermo—a blend of estate-grown and purchased fruit aged 11 months in 34% new oak—includes small proportions of Merlot and Malbec. Offering up cherries, cassis and slightly earthy scents, plus hints of cinnamon and nutmeg on the nose, it's full-bodied and nicely balanced, with its firmness matched by softness. It's just a nice drink overall.

The 2019 Cabernet Sauvignon Palermo is assembled from vineyards in Pope Valley and Coombsville, among others, supplemented by bits of Merlot, Petite Sirah and Syrah. Subtle cedar notes accent cassis and cherries on the nose, while the full-bodied palate is supple and softly dusty in feel, then turns a bit tart and thins out on the finish, adding hints of bitter cocoa.

Medium to deep garnet-purple in colour, the 2018 Palermo gives up gregarious scents of kirsch, Black Forest cake and warm cassis with hints of dried mint, dark chocolate and rose hip tea plus a waft of unsmoked cigars. Medium to full-bodied, the palate is packed with ripe black berry layers, framed by velvety tannins and a lively line, finishing long and fragrant.
