Tasting notes
Deep amber with burnished mahogany glints, this aged Amontillado opens with roasted hazelnut, walnut husk, dried orange peel and a whisper of tobacco leaf and beeswax. The palate is bone dry yet remarkably complex, layering toasted almond, dried apricot, polished oak and saline minerality. Delicate oxidative notes from years of biological and oxidative aging lend depth, while vibrant acidity keeps the structure taut and lively. The finish is long, nutty and savory, echoing salted nuts and a faint touch of iodine.

About this wine
Fernando de Castilla Amontillado Rare Old is a Sherry from the Jerez-Xeres-Sherry appellation in Andalucia, southern Spain, made from Palomino. At 17% abv, it follows the classic Amontillado path: a wine that begins under flor and finishes through oxidative ageing.
Amontillado typically drinks savoury and nutty, with notes of roasted hazelnut, dried orange peel and tobacco, a saline edge and a long, tangy finish. Serve it lightly chilled alongside charcuterie and cured meats, hard cheeses, pork or poultry. It is equally at home with tapas and small plates on deck.
