Tio Pepe

Tío Pepe is the flagship sherry brand of González Byass, a family-owned bodega established in Jerez de la Frontera in 1835. Located in the heart of the Jerez-Xérès-Sherry denomination in Andalucía, Spain, the producer specializes exclusively in sherry wines using the traditional solera aging system that defines this unique Spanish wine region.

The Jerez-Xérès-Sherry appellation operates under strict regulations governing the production of sherry, requiring wines to be made from Palomino, Pedro Ximénez, or Moscatel grapes grown on the region's distinctive albariza soils. These chalky, limestone-rich soils retain moisture during the hot Andalusian summers while reflecting sunlight back to the vines. The solera system involves aging wines in a pyramid of oak barrels, where younger wines gradually blend with older ones over many years, creating consistency and complexity.

Tío Pepe Fino represents the classic dry sherry style, aged under a protective layer of flor yeast that develops naturally on the wine's surface in partially filled barrels. This biological aging process imparts the characteristic fresh, saline qualities and pale straw color that define fino sherry, making it one of the most recognizable expressions of Jerez winemaking.
