Ammonis

Ammonis is a wine producer based in Montagny, a village appellation in the Côte Chalonnaise district of Burgundy, France. The range spans multiple Burgundian appellations, including Montagny, Mercurey, and Chablis, suggesting a négociant or multi-appellation approach rather than a single estate focus.

The Côte Chalonnaise sits between the Côte de Beaune to the north and the Mâconnais to the south, producing wines from the same two grape varieties that define all of Burgundy: Chardonnay for whites and Pinot Noir for reds. Montagny is exclusively a white wine appellation, with all village-level wines permitted to carry the Premier Cru designation provided they reach a minimum natural alcohol level — a quirk that sets it apart from most other Burgundian appellations. Mercurey, by contrast, produces both red and white wines, with its reds from Pinot Noir generally regarded as among the more structured of the Côte Chalonnaise.

Ammonis works with both varieties across these appellations. The Chardonnay-based wines include a Montagny Premier Cru and a Chablis, the latter from a geographically distinct part of Burgundy in the Yonne département, where the cool climate and Kimmeridgian limestone soils give the variety a noticeably leaner, more mineral character than its Côte d'Or counterparts. The Mercurey is vinified from Pinot Noir, in keeping with that appellation's red wine tradition.
