Tasting notes
In strict compliance with the rules of the AOC, Trois Rivières Ambré (or Elevé sous Bois) is matured for 12 to 18 months under the care of the Cellar Master, in French oak casks of the highest quality. These few months in the undergrowth allow this delicate rum to acquire its superb golden and luminous color. The taste qualities developed are remarkable and particularly sweet: there are notes of honey, caramel and pain au lait.

Key characteristics
About this rum
Trois Rivieres is a renowned producer of Rhum Ambre Agricole, a type of rum that is made from fresh sugarcane juice rather than molasses. This style of rum is commonly produced in the French Caribbean islands, and Trois Rivieres is one of the most respected producers in the region. The history of Trois Rivieres dates back to the 17th century, when the estate was first established on the island of Martinique. The plantation was originally used to grow sugarcane, which was then processed into sugar and rum.
Over time, the focus shifted more towards rum production, and Trois Rivieres became known for its high-quality spirits. Today, Trois Rivieres is still producing some of the finest Rhum Ambre Agricole in the world. The production process begins with the harvesting of sugarcane, which is then pressed to extract the juice. This juice is then fermented using natural yeasts, which gives the rum its unique flavour profile. After fermentation, the rum is distilled in copper pot stills, which helps to concentrate the flavours and aromas.
Once the rum has been distilled, it is aged in oak barrels for a minimum of three years. This ageing process helps to mellow out the flavours and add complexity to the rum. The resulting spirit is a rich, amber-coloured rum with notes of vanilla, caramel, and tropical fruit.
Trois Rivieres also produces a range of other rums, including white rum and aged rums that have been aged for up to 12 years. Each of these rums has its own unique flavour profile, but they all share the same commitment to quality and craftsmanship that has made Trois Rivieres a household name in the world of rum.
Overall, Trois Rivieres is a producer that is steeped in history and tradition, and their Rhum Ambre Agricole is a testament to their commitment to quality and excellence. Whether you are a seasoned rum connoisseur or a casual drinker looking to try something new, Trois Rivieres is a producer that should not be missed.
