Jerez-Xérès-Sherry is the Denominación de Origen that governs the production of Sherry in southwestern Spain's Andalucía region. The appellation covers the so-called "Sherry Triangle" formed by the towns of Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María in Cádiz province. The triple name reflects the historical linguistic influences in the region—Jerez being Spanish, Xérès the French adaptation, and Sherry the English corruption of the original Arabic "Sherish."
The region's unique terroir centers on its distinctive albariza soils, a white chalky limestone that retains moisture during the hot, dry summers while providing excellent drainage. The Atlantic maritime influence moderates temperatures and creates the humidity necessary for flor development. Palomino Fino dominates plantings for dry sherries, while Pedro Ximénez and Moscatel grapes are used for sweet styles. The solera aging system, where wines are fractionally blended across multiple barrel levels, creates the complex layered character that defines authentic Sherry.
Sherry production encompasses a spectrum of styles from bone-dry Fino and Manzanilla aged under flor yeast, to rich Amontillado and Oloroso that develop through oxidative aging after the flor dies away. Each style displays distinct characteristics—Fino offers saline minerality and almond notes, Amontillado combines the freshness of biological aging with nutty oxidative complexity, while Oloroso develops deep amber color and concentrated walnut and dried fruit flavors. The biological and oxidative aging processes, unique to this region, create wines of remarkable longevity and distinctive character.
