Absent Elegance
Ingredients
- 60 mlAbsent 55 Absinthe
- 20 mlElderflower Liqueur
- 20 mlFresh Lemon Juice
- 10 mlSimple Syrup
- 1 egg whiteEgg White
Method
- Add the Absent 55 Absinthe, elderflower liqueur, lemon juice, and simple syrup to a shaker
- Add the egg white and dry shake vigorously for 30 seconds
- Add ice to the shaker and shake again for 15 seconds
- Double strain the mixture into a chilled coupe glass
To serve
Serve in a coupe glass, garnished with a lemon twist and a small sprig of fresh thyme placed delicately on the surface of the drink
