Ontario is Canada's largest wine-producing province, with vineyards concentrated primarily in the southern regions near the Great Lakes. The province's wine industry is centered around the Niagara Peninsula, which accounts for the majority of production, along with smaller regions like Prince Edward County and Lake Erie North Shore. The proximity to large bodies of water creates crucial microclimates that moderate temperatures and extend the growing season.

The continental climate is significantly influenced by the moderating effects of Lake Ontario and Lake Erie, which help protect vines from extreme temperature fluctuations. The Niagara Peninsula benefits from the Niagara Escarpment, a limestone ridge that provides excellent drainage and diverse soil types ranging from clay loam to sandy soils. This appellation experiences a longer growing season than much of Canada, with warm summers and the lake effect helping to delay autumn frosts.

Ontario has gained international recognition particularly for its icewine production, made from grapes that freeze naturally on the vine during winter months. Vidal Blanc is extensively used for icewine, alongside Riesling and Cabernet Franc. The region also produces dry table wines from varieties like Chardonnay, Pinot Noir, Riesling, and Cabernet Franc, with many vineyards focusing on cool-climate expressions of these grapes that showcase bright acidity and elegant structure.
