Hatsumomidi is a Japanese sake producer that crafts premium rice wines using traditional brewing methods. The brewery produces junmai-style sakes, which are made entirely from rice, water, yeast, and koji with no added alcohol or other additives.
The producer's current range focuses on higher-grade classifications within the junmai category. Their Junmai Ginjo represents sake made with rice polished to at least 60%, while their Junmai Daiginjo Muroka Genshu showcases an even more refined approach - using rice polished to 50% or less, bottled unfiltered (muroka) and undiluted (genshu) to preserve the full intensity of flavors and aromas developed during fermentation.
The Harada series appears to be a signature line from Hatsumomidi, with names like "Seiryu" and "Gengetsu" that follow traditional Japanese naming conventions often referencing natural elements or seasonal imagery common in sake culture.
