The Hennessy Heritage

Ingredients

  • 45 ml Hennessy Very Special Cognac
  • 20 ml fresh lemon juice
  • 15 ml honey syrup (1:1 ratio)
  • 10 ml aged balsamic vinegar
  • 2 dashes Angostura bitters
  • 1 egg white
  • Ice cubes

Method

  1. Add the Hennessy Very Special, lemon juice, honey syrup, balsamic vinegar, Angostura bitters, and egg white to a cocktail shaker without ice.
  2. Dry shake vigorously for 10 seconds to emulsify the egg white.
  3. Add a generous handful of ice cubes to the shaker.
  4. Shake firmly for 15 seconds until well-chilled and frothy.
  5. Double strain through a fine mesh strainer into the prepared glass.

Serve

Coupe glass chilled with ice beforehand. Garnish with a thin lemon wheel placed flat on the foam surface and a single star anise positioned at the rim. Serve immediately with the silky foam layer intact as the signature presentation element.
