Flinty, smoky minerality frames citrus zest and gooseberry on the nose. The palate is precise and taut, with grapefruit and crushed chalk driving a bracing acidity. Finish is long, saline and stony, classic Silex Sancerre.
Chateau de Fontaine-Audon's Terroir Silex is a Sancerre from the Loire Valley, made entirely from Sauvignon Blanc grown on the flint-rich silex soils that give the wine its name. This soil type is prized in Sancerre for the smoky, mineral edge it lends to the variety.
On the palate the wine carries citrus zest and gooseberry over a flinty, almost gunsmoke undertone, with the taut acidity Sancerre is built on. Serve at 10-12°C with goat's cheese, oysters or a simply dressed crudo.
