Galilee

Galilee, located in northern Israel, is the country's premier wine-producing region. The area encompasses several distinct growing zones across the Upper Galilee, Lower Galilee, and the volcanic plateau of the Golan Heights, each with its own microclimatic characteristics. Wine production here began in earnest during the modern era, with significant development occurring from the 1980s onward as producers invested in vineyards and winemaking infrastructure in this historically agricultural landscape.

The region's elevation—ranging from near sea level to over 1,200 meters on the Golan Heights—creates substantial temperature variation and distinct growing seasons. Higher-altitude vineyards benefit from cooler nights and longer ripening periods, while lower areas experience warmer, more Mediterranean conditions. This topographical diversity allows multiple harvest windows and supports the cultivation of both cool-climate and warm-climate varieties. Volcanic and basalt soils, particularly on the Golan Heights, contribute mineral character to the wines.

Galilee's producers focus primarily on classic grape varieties suited to varied elevations: Cabernet Sauvignon, Merlot, and other Bordeaux varietals thrive in the region's conditions, alongside white varieties including Chardonnay and Sauvignon Blanc. The cooler, higher-elevation sites produce wines with structured tannins and acidity, while warmer pockets yield riper, fuller-bodied expressions. This range of terroir and winemaking approaches has established Galilee as Israel's most consistent source of age-worthy red wines.
